Why This Recipe Works
- This stroganoff recipe is really simple to make and is absolutely filling.

Key Ingredients
Mushrooms - add a nice hearty umami flavor that perfectly blends and compliments the creamy plant based milk sauce. We like to use portobello mushrooms but you can use a mixture of white, cremini or shiitake mushrooms.
Non-Dairy Milk - since the first time we created this recipe, we've tried a few different plant-based milks to make the sauce. Unsweetened oat and almond milk are both good choices for a creamy sauce.
Vegetable Broth - a good flavorful vegetable stock is important to help round out the flavor in your sauce.
Pasta - our go to gluten free penne is by the brand Barilla.

Step By Step Instructions
Step 1: Prep the onions, garlic and mushrooms. Chop garlic, onions and set aside. Clean mushrooms by wiping off any dirt with a paper towel or clean kitchen towel. Slice and set aside.
Step 2: In a medium bowl prep the roux. Using a whisk mix together the flour, non-dairy milk, salt and pepper, dried thyme and vegetable broth and set aside.
Step 3: In large pan melt butter. Add the chopped onions and cook until translucent, about 3 to 5 minutes.
Step 4: Add mushrooms and cook for 8 to 10 minutes until mushrooms are nicely browned, stirring occasionally. Optionally - if using plant based meatballs add now.
Step 5: Cook pasta. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and keep warm.
Step 6: Reduce heat and add the roux mixture to pan. Cook for approximately 10 minutes. Stirring sauce until it begins to thicken and becomes creamy.
Step 7: Serve warm over pasta or mashed potatoes.
Servings Suggestions
We love vegan mushroom stroganoff with sweet and spicy brussel sprouts, roasted broccoli and carrots or roasted butternut squash and sweet potatoes on the side.
Storage And Reheating
- To Store. Store in an airtight container for up to 4 days.
- To Reheat. Reheat in the microwave or on the stovetop over medium heat until heated through.

- ¼ cup All Purpose gluten free flour
- 1 teaspoon Salt
