A tart and sweet limeade made with Lime Leaf and a few ingredients, fast and simple.

Makrut lime leaves (pronounced mah-krut), are aromatic leaves that add a distinctive lime flavor when added to salt mixes, spice blends, stir fries or drinks.
This limeade has a bright and tangy flavor, refreshing on a hot summers day.
What is Kaffir Lime?
The kaffir lime (scientific name: citrus
hystrix) is part of the citrus family.
They have a very wrinkly skinned fruit and don't give a lot of juice. Kaffir lime leaves are very aromatic and flavorful. Their zest is less citrusy, but they do have a spicy lime fragrance and a woody note. The juice is sharp, and the zest is a little oilier.
If You Can't Find A Kaffir Lime?
Fresh kaffir lime leaves are better; but if you don't have them. Lime zest or other lime substitutes include Persian limes (also known as a Tahiti lime, or a seedless lime). Regular lime leaves do not have same flavor.
Ingredients
Kaffir Lime leaves - leaves of the Kaffir Lime. Its used in Southeast Asian cuisine and the essential oil is used in perfumes. The rind and crushed leaves emit an intense citrus flavor and fragrance.
Sugar
Club or seltzer soda
Fresh lemon juice

Instructions
In a saucepan combine water, sugar and lime leaves over medium heat. Bring to a boil, lower heat and simmer for 10 minutes.
Set aside to cool and then refrigerate until cold.
Fill 4 glasses with ½ cup of the syrup, 2 tablespoons lemon juice and ½ cup club soda. Stir. Add ice and serve
