Roasted Broccoli & Butternut Squash
When it comes to easy to make and healthy side dishes. This delicious roasted broccoli & butternut squash is a winner. This recipe is a perfect Thanksgiving side dish.
Broccoli Butternut Squash Avocado Oil Thyme
Preheat oven to 425 degrees. Line a baking sheet with parchment paper for easy clean up and set aside. Or for maximum browning, skip the paper.
Cut the broccoli into small pieces. Place in colander and rinse. Set Aside.
With a vegetable peeler (like a Y-peeler) peel off the outer layer of the butternut squash.
Prepare the butternut squash. Cut and scoop out seeds, discard seeds and pulp. Dice the squash.
Add oil, thyme, salt and pepper and mix thoroughly. Toss until evenly coated.
Place on baking sheet side by side; slightly touching to help roast. Bake for 15 minutes until golden brown on top.
