Easy Vegan Lemon Bars


Fresh Lemons  Oat Milk Cornstarch Turmeric All Purpose Gluten-Free Flour Vegan Butter

Step 1:

Preheat oven to 350 degrees. Line an 8 by 8 inch pan with parchment paper. In a bowl, add vegan butter, sugar and salt. Add flour, stir until combined and thick.

Step 2:

Press into pan. Bake for 16-18 minutes until the edges are very lightly browned. Set aside.

Step 3:

Zest and juice lemons

Step 4:

Whisk together water and 8 tablespoons of cornstarch into and mix until mixture is smooth and lump free.

Step 5:

In a saucepan add milk, sugar, cornstarch slurry and turmeric. Whisk until dissolved. whisk in lemon juice and lemon zest. Stirring until the sugar dissolves and the mixture thickens.

Step 6:

Pour filling over the crust. Bake for 15 minutes. Let cool for 30 minutes. Transfer to fridge for 1-2 hrs until set.
