Our vegan gluten-free peach cobbler recipe is easy to make and has a delicious cinnamon peach filling, that can be made with fresh, canned or frozen peaches.
Vegan Butter Vegan Milk Cinnamon
Peaches Sugar Gluten Free Flour Oil
Salt Baking Powder
In a medium sized bowl, mix gluten-free flour, sugar, baking powder and salt. add cold milk and cut cold vegan butter and vegan sour cream into dry ingredients
Place a sheet of parchment paper down, lightly dust with gluten-free flour. Use edges of parchment paper to knead dough. Refrigerate the dough for 1 hour.
Make a slurry to thicken peach filling, mixing 1 tbsp of gf flour and 3 tbsp of water. Add peaches in juice and butter to saucepan on medium heat. Add salt, sugar, vanilla, cinnamon and mix.
Cook for 5 to 7 minutes until mixture thickens. Remove from heat and let cool. pour peach filling into greased baking dish.
Preheat oven to 350°F. Roll out dough with rolling pin, larger than baking dish. Place dough on top of cobbler. Brush glaze over crust, sprinkle cinnamon sugar.
Bake in oven for 45 minutes until golden brown on top & liquid is bubbling. Let cool for 15 minutes and serve warm with a scoop of vegan vanilla ice cream or vegan whipped cream.
