Just Egg Quiche

Perfect for breakfast or brunch. This vegan quiche baked in a buttery flaky gluten-free crust filled with spinach, mushrooms and ooey gooey vegan cheese. Easy to make and delicious.

What Is Vegan Quiche Made From?

For this recipe we are using the vegan egg replacer product, Just Egg. Other recipes use tofu or chickpea flour as great egg substitutes to.

Ingredients

Gluten-Free Pie Crust Just Egg Fresh Spinach Mushrooms Red Peppers Non-Dairy Cheese Onions Salt Garlic Powder Pepper

Step One

Preheat the oven to 350 degrees. Shake the Just Egg bottle vigorously so there’s no separation.

Step Two

Place pie shell on baking sheet to catch any over flow in oven. In a large bowl add mushrooms, onions, peppers, spinach, spices and stir to combine.

Step Three

Sprinkle vegan cheese into bottom of pie shell.

Step Four

Pour Just Egg mixture into pie shell.

Step Five

Bake at 350F for 55 minutes or until it’s no longer jiggly in the center and a toothpick/knife comes out clean. Let cool for 10 mins before serving.
