High Protein Chickpea Waffles (Vegan & Gluten-Free)
These high protein waffles; made from chickpea flour, are everything you want and need in a vegan gluten-free waffle. These homemade waffles are moist, fluffy, delicious and simple to make. They can be enjoyed right away or frozen for later.

Waffle Maker - Preferably Belgian
Ingredients
1¼cupChickpea flour
¾cupgluten-free all purpose flour- we like using Better Batter brand
2teaspoonsBaking Powder
½teaspoonsSalt
1½cupwater
2tablespoonsMaple syrup
1vegan egg- we like Bob's Red Mill
1teaspoonCinnamon
1teaspoonsVanilla
Instructions
Preheat waffle iron according to manufacturer's instructions.
Prepare vegan egg according to package instructions.
In a large bowl combine dry ingredients well: gluten-free flours, baking powder, cinnamon and salt.
Gently whisk in wet ingredients: water, maple syrup, vanilla and vegan egg into dry ingredients.
Mix wet and dry ingredients together well; adding a little extra water if needed. Batter should be pourable.
Lightly oil waffle maker.
Pour mix into waffle maker making sure to turn occasionally to prevent the batter from sticking to the waffle maker.
Check waffles occasionally during rotation because the chickpea can cook faster than regular waffles.
Notes
Can You Make Ahead & Freeze?Yes, these waffles are perfect for making in advance and freezing for later. We’ve frozen up to a month or two in advance. To reheat simple remove from freeze and microwave for a few minutes.
