This homemade Passion Fruit Lemonade is the perfect cold drink refresher. Easy to make and an excellent balance of tart and sweet tropical flavor. Loaded with fresh passionfruit, it's a delicious crowd-pleaser at the next bbq and takes less than 30 minutes to make.
Prepare passion fruit. Slice in half. Spoon out seeds and pulp. (Note - you will remove seeds after making the syrup).
In a medium saucepan, combine water, passion fruit and sugar. Place unlidded saucepan over medium heat for 6 to 7 minutes to bring mixture to a boil. Reduce temperature to low. Allow syrup to simmer for 10 minutes, stirring as to not burn your syrup.
Turn the heat off and let the mixture cool. The mixture will thicken slightly and be a deep golden hue.
In a wide-mouth bowl or measuring cup, strain the mixture through a fine-mesh sieve, pressing on the seeds to extract as much liquid as possible. Set seeds aside if you would like to use later as drink garnish if desired. The mixture will yield approximately 3 cups. We will use 2 ½ cups for this recipe. Reserve the remaining ½ cup and use for mocktail, cocktail or topping for yogurt.
Juice The Lemons
A cup of lemon juice with yellow citrus juicer on top and fresh lemons on side of cup.
Cut the lemons in half and squeeze out the lemon juice by hand or with a citrus juicer of your choice, to yield 1 ¼ cups.
Mix The Lemonade
In a large pitcher, combine 2 ½ cups of Passion Fruit syrup, freshly squeezed lemon juice and cold water. Stir well to combine.
Taste and adjust the sweetness or tartness to your preference, adding more sugar or lemon juice as needed.
Chill & Garnish
You can add Passion fruit seeds as garnish for a crunchy texture.
