Top Tip: If you don’t have a strainer; you can use cheesecloth to strain the passionfruit simple syrup mixture.
3 Ingredients 🍋
- Passion Fruit - the key ingredient is a sweet, tart fruit with a aromatic scent.
- Fresh Lemon Juice - fresh lemons are essential for this recipe to get that great fresh-squeezed lemonade taste. Depending on the size of your lemons, you will need between 6-7 medium lemons for 1 ¼ cups of lemon juice for the recipe.
- Sugar - depending on the level of sweetness you like, adjust accordingly.
How Do You Pick Ripe Passion Fruit?
Passionfruit is a purple or yellow hard-shelled fruit about the size of a small tangerine. It's filled with a rich tart pulp.
Passion Fruit is ripe when the shell becomes brittle and wrinkled. Select fruit that are heavy for their size, large and plump. It’s heavy for it size because of the juice its creating. When ripe, the fruit is fragrant. Avoid overly hard fruit, which is a sign it's underripe. Store fruit in refrigerator.
The passion fruit grown in California are in season most of the year, from January through November.
Variations
- Tropical fruit like mangoes or pineapples make great alternatives too.
- Adding sparkling water to make a great mocktail.
- Great for making passion fruit and lemonade popsicles.
- Or adding a splash of your favorite spirit like Vodka or Presecco for a Mimosa or any other delicious cocktail.
Substitution - Frozen
If fresh Passionfruit is unavailable in your area you can substitute it with frozen Passion fruit.
You can also order canned Passion Fruit pulp online from Amazon. Make sure to get Passion Fruit pulp and make sure it's not a cocktail, drink, beverage or syrup. Those have added sugars and will be much too sweet for this recipe.
Instructions
Make Passionfruit Syrup
Step 1: Prepare passion fruit. Slice in half. Spoon out seeds and pulp. (Note - you will remove seeds after making the syrup).
Step 2: In a medium saucepan, combine water, passion fruit and sugar. Place unlidded saucepan over medium heat for 6 to 7 minutes to bring mixture to a boil. Reduce temperature to low. Allow syrup to simmer for 10 minutes, stirring as to not burn your syrup.
Step 3: Turn the heat off and let the mixture cool. The mixture will thicken slightly and be a deep golden hue.
Step 4: In a wide-mouth bowl or measuring cup, strain the mixture through a fine-mesh sieve, pressing on the seeds to extract as much liquid as possible. Set seeds aside if you would like to use later as drink garnish if desired.
The mixture will yield approximately 3 cups. We will use 2 ½ cups for this recipe.
Reserve the remaining ½ cup and use for mocktail, cocktail or topping for yogurt.
Juice The Lemons
Cut the lemons in half and squeeze out the lemon juice by hand or with a citrus juicer of your choice, to yield 1 ¼ cups.
Tip: Did you know if you microwave lemons they are easier to squeeze? Just warm them up for a few seconds or make sure they are room temperature.
Mix The Lemonade
Step 5: In a large pitcher, combine 2 ½ cups of Passion Fruit syrup, freshly squeezed lemon juice and cold water. Stir well to combine.
Step 6: Taste and adjust the sweetness or tartness to your preference, adding more sugar or lemon juice as needed.
Chill & Garnish
Step 7: You can add Passion fruit seeds as garnish for a crunchy texture.
Serve over ice with lemon slices.
