Why Purchase Culinary Lavender?
Although all varieties of lavender are edible, some are not as good for cooking. The term culinary lavender refers to both the type of lavender and the way the lavender is processed.
Purchasing culinary lavender ensures your lavender has a distinctive sweet yet floral note. Also, it doesn’t give you a soapy taste associated with bath, beauty and candle products. You can purchase culinary lavender from a number of online retailers. Some we like: The Spice House and Penzey.
Variations
- Berries - You can use blackberries instead of blueberries.
- Herbs - If you don’t like lavender can substitute mint or basil.
- Adding a splash of your favorite spirit like Vodka or Presecco for a Mimosa.
- Add more or less sugar depending on your desired sweetness.
Instructions
Make Blueberry Lavender Syrup
Step 1: In medium saucepan, combine water, blueberries, lavender, and sugar. Place unlidded saucepan over high heat for 6 to 7 minutes to bring mixture to a boil. Reduce temperature to low. Allow syrup to simmer for 10 minutes, stirring occasionally.
Step 2: Turn heat off and leave blueberries and lavender to steep in syrup for 10 minutes. If you want a subtle lavender flavor, steep for at least 5 minutes until the blueberries have broken down and burst open. The mixture will thicken and be a deep purple hue. Gently crush any remaining whole blueberries with a spatula against the side of the pot.
