- White Beans - makes the dip creamy and gives you a great protein boost.
- Non-Diary cream cheese - makes the dip so creamy and smooth.
- Non-Dairy Milk - helps create smooth creamy base.
- Vegan Cheddar Cheese - instead of the traditional Velveeta we use vegan cheddar as a substitute.
- Vegan Parmesan Cheese - adds to cheesy flavor and adds a slightly tangy flavor.
- Seasonings - nutritional yeast, smoked paprika, garlic powder, salt and pepper for flavor.

Step By Step Instructions
STEP 1. Cook vegan sausage crumbles according to package instructions. Melt vegan butter and set both aside.
STEP 2. Add the beans to the blender.
STEP 3. Add vegan cheeses, oat milk, melted butter and broth to blender.
STEP 4. Add vegan cream cheese, nutritional yeast, smoked paprika, garlic powder, salt, and pepper to the blender and blend until smooth.
STEP 5. Pour the vegan queso cheese sauce into a saucepan. Stirring frequently, heat over medium-low heat until warm and all cheese is melted. Stir in crumbles.
STEP 6. Stir in the drained can of Rotel. Stir until well incorporated then serve.
Recipe FAQ’s
Rotel is a brand of canned tomatoes with diced green chiles. That come in different varieties: original, hot, mild, no salt added, fire-roasted, etc. We use the original but all varieties will work.
Yes, the dip can be made in a slow cooker. Combine all ingredients in the crock pot/slow cooker and set to low for 2-3 hours stirring occasionally until melted. Once melted, turn the slow cooker to warm.
Storing Instructions
Store. Store the dip in the fridge tightly covered and sealed. Leftovers can be stored in the fridge for up to 3 days.
To Reheat. When reheating dip, simply return it to a low heat and stir until it has softened and is warm.

- 14 oz vegan sausage crumbles - depending on the brand of crumbles, packaging could be anywhere from 10oz to 14oz. All will work.
- 15 oz white beans drained/rinsed (we use Great Northern beans)
- 1 cup vegan cheddar cheese shreds
- ¾ cup vegan parmesan cheese
- ¾ cup oat milk full fat
- ½ cup low-sodium vegetable broth
- 4 oz vegan cream cheese softened to room temperature
- ¼ cup nutritional yeast
- 2 tablespoon vegan butter melted
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 10 oz can Rotel - drained
