Ready in under 30 minutes. This easy to make Vegan Rotel Dip is a blend of vegan cheddar cheese, vegan cream cheese, rotel tomatoes, white beans, soy crumbles and spices, all melted to gooey perfection. A perfect game day or Father’s Day treat.
14ozvegan sausage crumbles- depending on the brand of crumbles, packaging could be anywhere from 10oz to 14oz. All will work.
15ozwhite beansdrained/rinsed (we use Great Northern beans)
1cupvegan cheddar cheese shreds
¾cupvegan parmesan cheese
¾cupoat milkfull fat
½cuplow-sodium vegetable broth
4ozvegan cream cheesesoftened to room temperature
¼cupnutritional yeast
2tablespoonvegan buttermelted
1teaspoonsmoked paprika
½teaspoongarlic powder
½teaspoonsalt
¼teaspoonpepper
10ozcan Rotel- drained
Instructions
Cook vegan sausage crumbles according to package instructions. Melt vegan butter and set both aside.
Add the beans, vegan cheeses, oat milk, broth, vegan cream cheese, nutritional yeast, melted vegan butter, smoked paprika, garlic powder, salt, and pepper to a blender and blend until smooth.
Pour the vegan queso cheese sauce into a saucepan. Stirring frequently, heat over medium-low heat until all cheese is melted.
Stir in the drained can of Rotel. Stir until well incorporated then serve.
