Key Ingredients & Substitutions

- Dried Lavender Buds - make sure to use only culinary grade lavender (specifically Lavandula angustifolia). Other varieties, like Lavandula stoechas or ornamental hybrids, are not recommended for ingestion.
- Granulated Sugar - the base of the recipe and adds the sweetness.
- Butterfly Pea Flowers (Optional) - this ingredient is optional but great if your seeking some of the quintessential purple color we associate with lavender items.

How We Use The Lavender Simple Syrup
- Stir into iced lattes, matcha, or lavender blueberry lemonade.
- Drizzle over vegan pancakes, cakes, or fruit.

Step By Step Instructions

STEP 1. Combine. In a medium saucepan add dry ingredients into pan - sugar, dried lavender and optionally the butterfly pea flowers if using.
Optional add-ins: Add lemon zest now if using. Do not add vanilla extract until after straining.

STEP 2. Heat. Add water and bring mixture to a gentle simmer over medium heat, stirring until the sugar has dissolved (about 6-7 minutes total on heat).

STEP 3. Steep. Remove from heat. Let the lavender steep for 10-20 minutes, depending on desired strength. Do a taste test after the first 10 minutes to determine if you would like a stronger lavender flavor.

STEP 4. Strain. Use a fine-mesh sieve or cheesecloth to strain the syrup into a clean jar or bottle. Discard the solids.
If making variation:
If using vanilla extract, stir it in now after straining.

Step 5. Cool & Store: Let syrup cool completely. Store in a glass container with lid in the refrigerator.
Storing Instructions
Not recommended to store homemade syrups at room temperature, as they have a higher chance of spoiling and/or crystallizing.
Storage. Store in a clean, airtight glass or plastic container in the refrigerator and use within 1 to 2 weeks. Because this syrup is infused, it has a shorter shelf life than plain sugar syrups due to natural plant compounds and moisture.
Signs You Should Throw It Out
Do not taste if you see:
- Mold growth, even tiny spots
- Bubbling or carbonation
- Slimy texture
- Sour, alcoholic, or yeasty smell
These indicate fermentation or microbial growth.
