For this simple syrup, we like to use a ratio that falls between traditional simple syrup (1:1) and rich simple syrup (2:1). Why this matters, it gives you a syrup sweet enough for cocktails and mocktails but light enough for baking. Saving you time and effort in the kitchen.
Key Ingredients

- Muscadines - are a grape variety native to the southeastern United States. Known for their thick skin, large size, sweet, and pungent flavor. Muscadine season is late July through early September. Their taste is similar to grapes but more floral.
- Granulated Sugar - is the base of this syrup and provides the sweetness. We preferred Trader Joe's Organic sugar evaporated cane juice which is vegan because it isn't processed with bone char unlike many conventional sugars.
- Water - we like to use filtered water but tap water works well too.

How We Use Muscadine Simple Syrup
- Stir into sweet teas and lemonades.
- Mix into cocktails or mocktails.
- Spoon over your vegan yogurt bowls for a sweet topping.
- Drizzle over vegan pancakes, waffles or fruit.
Step By Step Instructions

STEP 1. Prepare. Wash and slice 1 ½ cups of muscadines.

STEP 2. Heat. Add the washed and sliced muscadines, 1 cup of sugar, and 1 cup of water to a medium saucepan.

STEP 3. Steep. Set the pan over medium heat and cook for about 11 minutes, stirring occasionally, until the sugar has fully dissolved and the muscadines begin to soften and release their juices. Remove from heat. Using a spoon or potato masher, gently mash the muscadines to extract more flavor. Start slowly and carefully as the syrup will be hot. Let the mixture sit for another 5 to 10 to allow it to thicken slightly.

STEP 4. Strain. Pour the mixture through a fine-mesh strainer or cheese cloth into a clean bottle or jar. Press on the solids to get as much liquid out as possible.

Step 5. Cool & Store: Let syrup cool completely at room temperature. Store in a glass container with lid in the refrigerator.
Storing Instructions
Refrigerator. Store in a clean, airtight glass or plastic container in the refrigerator and use within a 1 week. Because this syrup is infused with fresh fruit,the natural yeasts on grape skins and fruit sugars it has a shorter shelf life than plain sugar syrups due to natural plant compounds and moisture.
Signs You Should Throw It Out
• Mold growth, even tiny spots
• Bubbling or carbonation
• Slimy texture
• Sour, alcoholic, or yeasty smell
These indicate fermentation or microbial growth.
