Ingredients
This recipe needs just 5 ingredients.
- Ripe seedless watermelon- Seedless because... no one wants seeds in their popsicles. Here's a guide to picking a perfectly ripe and sweet watermelon for your Watermelon popsicles.
- Fresh lime juice- Just one lime to balance out the sweetness of the watermelon and mint sugar.
- A few mint leaves - Mint is combined with the simple syrup to enhance the fresh flavor of the popsicles.
- Sugar- Acts as an extra sweetener.
- Pectin - optional but it’s totally worth it. Pectin, sugar and alcohol all help to lower the freezing point of the popsicle to ensure you don’t get rock hard, icy popsicles. Pectin is a good ingredient to keep in the pantry. And you’ll definitely get your money’s worth. We also use it to make simple microwave Strawberry fruit jam.
Make Mint Simple Syrup
Of course you can buy simple syrup, but it's super easy to make and will save you money and extra additives.
Make a double batch of simple syrup. This mint simple syrup is great for making sweet tea, cocktails, fresh blueberry lemonade or mock-tails too.
- ½ cup Water
- ½ cup Sugar
- ½ cup Mint leaves - reserve and chop few mint leaves to use in molds.
Step 1: Put the crushed mint leaves, and sugar into a heatproof, oversized glass bowl or pitcher.
Step 2: Boil the water and carefully pour over the sugar and mint. Stir constantly until the sugar is fully dissolved.
Makes approximately ¾ cups of simple syrup.
Step By Step Popsicles Instructions
Step 1: Make simple syrup (see directions above).
Step 2: Cut the watermelon from the rind and cut into cubes. Place the watermelon cubes in a large bowl.
Step 3: Add the cubed watermelon to the blender and blend until its a smooth puree.
Step 4: Add the mint simple syrup and juice from half lime to the watermelon purée. Pulse for a few seconds to combine. Optionally, add a few chopped mint leaves to the mixture before pouring.
Step 5: Pour liquid into the popsicle molds. This recipe will make 6 to 8 depending on your pour and the size of your molds.
Step 6: Depending on your freezer, they will take 4-6 hours to freeze fully. Enjoy the refreshing flavors!
Tips
- If you do not have popsicle molds you can also buy Disposable Ice Popsicle mold bags as an alternative.
- Choose a ripe watermelon. Use ripe and sweet watermelon for the best flavor. Look for watermelons that feel heavy for their size, have a uniform shape, and produce a deep, hollow sound when tapped.
- Balance sweetness. Taste the watermelon before adding sweetener to gauge its natural sweetness, you may enjoy it without the sugar!
- Blend well. Use a blender or food processor to ensure the watermelon and mint leaves are thoroughly blended into a smooth mixture.
- Patience is key. Allow enough time for the popsicles to freeze completely before attempting to remove them from the molds. Running warm water over the outside of the molds can help loosen the popsicles if they're stubborn to release.

Yes, you can use small paper or plastic cups as molds. Pour the mixture into the cups, cover them with aluminum foil, make a small slit in the center of each foil and insert a popsicle stick. Freeze until solid.
While a blender makes the process easier, you can still make popsicles without one. Simply mash the watermelon with a fork or potato masher until it's a smooth consistency. Chop the mint leaves finely and mix them in.
Storage
Homemade popsicles can be stored mold or unmolded. We recommend storing unmolded to save refrigerator space.
Store popsicles in a freezer safe ziplock bag or airtight container. You can place a piece of parchment or plastic wrap to keep them from sticking. They will stay fresh in the freezer for a month.
For longer storage wrap individually to keep from getting freezer burn and put in freezer bag or airtight container.
