Ingredients
- Beyond Steak - a plant-based beef substitute read our full Beyond Steak review or substitute Gardein plant-based meat substitute.
- Fresh Ginger - gives this dish a warm, spicy and peppery taste.
- Coconut Aminos or Low Sodium Soy sauce - you can also substitute a low-sodium Tamari sauce or Gluten-Free Tamari.
- Light Brown Sugar - adds just enough sweetness and complements the heat, salt and savory notes.
- Corn Starch - to thicken the sauce. You can substitute tapioca starch.
- Sesame Oil - very distinct, strong nutty earthy flavor.

Variations
Vegetables: Feel free to add ½ cup of vegetables such as sliced carrots, bok choy, mushrooms, snow peas or bell peppers. If using carrots, add them at the same time you cook the broccoli, so they will be steamed together.
For vegetables that cook faster like mushrooms and snow peas, you can add them halfway through steaming the broccoli. Then return them to the pan at the end of cooking, at step 6.
Substitution
You can use frozen Broccoli instead of fresh.
If you can’t find or don’t have any Beyond Steak on hand you can also use mushrooms. Shiitake or Portobello mushroom - 6 large mushroom caps. Sliced up into about ⅚ strips per cap.
Tip
Use low-sodium soy sauce if sodium is a concern for you.
Step-By-Step Instructions
Step 1: Make the brown sauce by mixing together the fresh ginger, minced garlic, hot water, low sodium soy sauce, light brown sugar, black pepper, salt and sesame oil. Whisk in the cornstarch (the hot water helps to dissolve the cornstarch). This creates a slurry effect to help thicken the sauce when cooked. Set aside.
Step 2: Steam the broccoli. Add about ½ cup of water with about 20 ounces of broccoli and steam on medium-high heat for about 10 minutes and remove from pan.
Step 3: Cook the vegan beef according to package instructions. Add the sauce, and stir until it thickens, about 30 seconds.
Step 4: Stir in the broccoli, and toss until the vegetables and beef are all covered in sauce. Add salt and pepper as needed.
Step 5: Add any garnishes you want like sesame seeds and green onion and serve the vegan beef and broccoli over rice or noodles.

Storage
Store - in an air-tight container in the fridge for up to 3 days. Reheat in the microwave or on the stove top.
Freezer - you can store this recipe in an airtight container in the freezer for up to a month. But it’s really better fresh. The broccoli will get mushy. Thaw in the fridge before reheating.

- 1 head Broccoli - 4 cups Broccoli Florets cut to bite-size florets
- ½ cup Water - to steam broccoli
- 1 bag Beyond Steak

- ½ cup Hot water
- 6 tablespoon Coconut Aminos or Low Sodium Soy sauce - you can also substitute a low-sodium Tamari sauce or Gluten-Free Tamari.
- 2 tablespoon Brown Sugar - packed lightly
- 2 tablespoon Sesame oil
- 1 ½ tablespoon Cornstarch
- 2 teaspoon Fresh Ginger - grated
- 2 teaspoon Garlic - minced from 3 cloves
- ½ teaspoon Black pepper
- ½ teaspoon Salt - if using non low sodium soy sauce do not use.
Toppings
- Optionally - top with sesame seeds, chopped green onions and red pepper chili flakes.

Yes, arrowroot and tapioca are good substitute for cornstarch. The ratio for arrowroot is 1:1 and for tapioca it’s 1:2. Please let us know how it turns out.
