    Breakfast is the most important meal of the day. And Meal prepping is key for our dietary restrictions; it's a big help at breakfast and lunch to have items ready to grab and go.

    It can be hard finding good food on the go that’s plant-based and gluten-free. And you can forget about adding on nut-free (we have those allergies too), soy-free and dairy-free restrictions. 

    I literally have been served a handful of rice noodles and a piece (as in one) of bok choy, because people couldn't figure out what to serve me. Luckily, a friend came to the rescue with a bag of almonds. My lesson, was learned be prepared. 

    Ingredients

    Three ingredients is all you need to save loads of time.

    • Firm Tofu - we simply seasoned firm tofu. We used a special salt called Kala Nanak. Its high in sulfur producing a strong eggy taste.
    • Vegan Gluten-Free Sausage -  we used store bought 
    • Vegan Gluten-Free Biscuits - we used our homemade buttermilk gluten-free vegan biscuits recipe. Keep reading for gluten-free vegan alternatives.

    Breakfast Sandwiches Substitutes & Options

    To really help you save time in getting a healthy breakfast on the table quickly. Below we are recommending a list of some of our favorite pre-made breakfast convenience foods. Check out our full vegan and gluten-free product guide also.

    Vegan Eggs:

    • Just Egg (by Eat Just) they produce plant-based alternatives like eggs and mayo made from mung beans.
    • Plant-based egg by Simply Eggless made from Lupin Beans (by Simple Brands Foods). A liquid egg substitute similar to Just Egg.

    Gluten-Free Bread:

    • Pamela's makes a good biscuit & scones mix. 
    • Bob's Red Mill Gluten Free Biscuit & Baking Mix 
    • Can substitute Katz vegan gluten-free English muffins.
    • O’Doughs and Schär’s bagels are both fantastic as replacement for biscuits 

    Plant-Based Sausage: 

    • For pre-made vegan and gluten-free sausage we enjoy Hilary's spicy and apple maple veggie sausage variety’s.
    • Beyond also makes vegan sausage patties and links

    Optionally - you can add slices of plant-based cheddar cheese slices 

    How Long Do Breakfast Sandwiches Keep In The Refrigerator Or Freezer?

    We only recommend a day or 2 in the fridge. Freezing is best option they will keep for at least a month. 

    Prepare Sandwiches For Storage

    Wrap breakfast sandwiches in parchment paper, seal with tape we use a low stick washi tape, date them and place them in a freezer safe resealable plastic bag. Freeze for up to 1 month.

    Reheating Breakfast Sandwiches

    To prepare them from the freezer just place in the refrigerator the night before to defrost. In the morning microwave in 30 seconds increment until warm. Enjoy your grab and go breakfast

    Easy To Make Gluten-free Vegan Breakfast Sandwich

    Ingredients
      

    • 4 Vegan Gluten-Free Biscuit - if your in the mood to cook rather than purchase, see link to our homemade biscuit recipe above
    • 4 Vegan Gluten-Free Sausage - store bought vegan gluten-free patties like Beyond or Hilary’s. Prepare according to package directions.
    • 1 package Tofu - firm or extra firm
    • Olive Oil
    • ½ teaspoon Kala Nanak Salt
    • Black Pepper

    Instructions
     

    Prepare Biscuits

    • If making homemade gluten-free vegan biscuits follow our recipe instructions for vegan gluten-free Buttermilk. If using store bought prepare accordingly to package directions.

    Making Tofu Egg Patty

    • Preheat oven to 425 degree
    • Remove tofu from package, no need to drain
    • Slice tofu lengthwise. You will have 2 rectangle pieces. Take glass, cookie cut or just free-hand with knife. Cut 2 circle from each pieces of tofu
    • Brush both slices of tofu with EVOO and salt and pepper to taste. Place on large baking sheet.
    • Prepare vegan gluten-free sausage according to package instructions

    Assemble Breakfast Sandwiches

    • After all your ingredients are done. Assembly sandwich.
