What Is Jackfruit?
The fruit is a species of tree in the fig, mulberry, and breadfruit family. It is grown in parts of India, southeast Asia, the East Indies, the Philippines, Thailand, Malaysia, Indonesia and also grows in Africa.
Ripe jackfruit is naturally sweet, with subtle flavoring.
The young (unripe) fruit is gaining popularity as a plant base meat substitute because of its meat-like texture and ability to soak up flavors well. Its a great substitute for chicken and pork.
Key Ingredients
- Jackfruit – drained and rinsed. Buy young green jackfruit in brine NOT in syrup or to be confused with ripened jackfruit, which would be too sweet. We use the Trader Joe’s brand canned fruit.
- Taco seasoning
- Cashew Queso cheese sauce - you can buy or make. We love the cashew queso recipe by The Minimalist Baker.

Instructions
Step 1: Drain and transfer the can of jackfruit into a bowl. Shredding the fruit with fork or hands and set aside.
Step 2: Prep garnish. Rinse and cut tomatoes; shred spinach and slice avocados. Set aside.
Step 3: Prepare queso and and set aside; if not using premade vegan queso or cheese sauce.
Step 4: In a large skillet on medium heat. Add 1 tablespoon of olive or vegetable oil. Add jackfruit, onion & garlic powder, taco seasoning, brown sugar, black beans (optional) and water. Simmer on medium low heat for 15 minutes.
Step 5: Assemble nachos. Spread a single layer of tortilla chips on a plate.
Step 6: Top with jackfruit, shredded spinach, cherry tomatoes. Repeat this layer. Top with queso cheese, sour cream and avocados.
