Just Egg FAQ’s
JUST Egg is a plant-based egg substitute product made from mung beans, soy, canola oil plus carrots and turmeric for coloring plus spices for seasoning.
In this application; the taste, smell and texture with the addition of the seasonings are identical to real eggs. We’ve served this to non vegans who couldn’t tell the difference. JUST Egg has the same eggy flavor of traditional eggs. We tried our very first bottle over two years ago and wrote a review and a little more about mung bean in there natural state.
It’s a fantastic egg substitute that can be used for baking and cooking. We use it in a lot of our vegan breakfast recipes. See breakfast, brunch and dinner recipes below.
Yes, you can bake with Just Egg too! Baking with Just Egg is just as simple as 3 tablespoons for every one egg the recipe calls for. We’ve used it oin gluten-free Betty Crocker and Whole Foods yellow cake boxed mix.
And in recipes calling for up to three eggs. We haven’t experimented with recipes that call for more than 3 eggs or recipes like soufflé yet but we intend to.
Keep refrigerated. Once opened consume within 7 days of opening.
Yes, you can freeze JUST Egg egg substitute. We regularly freeze unopened bottles of JUST Egg. We freeze the bottles for up to a month.
To unthaw we let the bottles sit in the refrigerator overnight; up to 2 days to unthaw. The texture is a little lumpy after defrosting but just shake vigorously to reconstitute. You may need to shake the bottle if you see any separation. *Please note JUST Egg doesn’t recommend freezing.
Yes, its more expensive that a dozen eggs.
At a cost of ~ 4.99 per 12oz bottle, which equals about 8 servings. Compared to a dozen eggs at ~ 2.99 for 12 eggs.
However, if you’ve been vegan and/or egg-free for a while you definitely know the struggles of substituting eggs in recipes; especially in baking.
For us it’s worth the cost to have a dependable egg substitute. We still love our tofu egg scramble with black salt/kala namak at breakfast. And still depend on other egg substitutes like Bob’s Red Mill or flaxseed but are happy to have this in our pantry too.
Three tablespoons of JUST Egg is equivalent to one chicken egg.
Yes, we cook JUST Egg in the microwave daily.
We pour about ⅓ cup into a small heatproof cup/bowl. Add a little salt and pepper. Microwave in 30-second increments until the mixture is cooked. About 1 ½ minutes (can vary depending on your microwave). The scrambled egg will be fluffy and delicious

I have a family member who can only tolerate Just Egg and I'm so happy I stumbled upon this post. I had no idea what to make for everyone given the food sensitivity so I made the frittata and everyone devoured it. Can't wait to try the breakfast quesadillas next. Great ideas.
