How To Store Sweet Potato Puree
According to the USDA website, opened low-acid canned goods like pumpkin and sweet potato puree last for up to four days in the fridge.
Refrigerator. Fresh or leftover canned puree lasts for about 4 days in the refrigerator. Remove leftover sweet potato puree from the can and place into a air tight container or place into a bowl and cover tightly with plastic wrap or aluminum foil.
Freezer. You can freeze fresh or canned sweet potato puree for up to 3 months. To freeze, spoon into a zipped-top bag, lay flat, squeeze out any air, and lay flat in the freezer. You can also freeze in a tightly-sealed container—the less air in the container the better—or in ice cube trays. Once frozen in ice cube trays, remove sweet potato puree cubes and place in a sealable container. Thaw at room temperature or in the refrigerator, if there is excess liquid after thawing, drain it.

However, because of texture and taste I would limit to replacing no more than two eggs in a recipe with sweet potatoes. For each egg, a recipe calls for, add in one quarter cup puree. For replacing oil add in a one-to-one ratio, so if a recipe calls for one half cup of oil, one half cup of puree can be added instead. The final product may have a slightly different flavor or color if you use sweet potato as a substitute, so it works best in baked goods such as chocolate cakes that have a dark color and strong flavor.
