For our oil-free citrus honey vinaigrette salad dressing we use dijon mustard. Mustard is a common ingredient in vinaigrette and it helps the oil and vinegar emulsify. Mustard also gives the vinaigrette a tangy kick.

Step By Step Instructions
STEP 1. Combine all the ingredients in a jar or any container with a lid.
STEP 2. Shake in tightly lidded jar. A mason jar or any recycled jar – pickle or jam jar – will do for 30 seconds until well blended.

STEP 3. Can use over green salad, quinoa salad or dipping sauce for jackfruit nuggets or tofu

STEP 4. Store in the fridge. The content will separate as it sits, so re-shake the dressing next time you use it.
How To Store
Store vinaigrette in jar or other glass container with a tight lid so that it’s easy to shake it up again when you need it. Will last week in fridge.

I have been eating a grapefruit a day recently and wondered if a grapefruit salad dressing existed that didn’t use oil. This is delicious. It is a little on the sweet side which surprised me even though there is 1/4 cup of honey in it. I expected more tangy, but this is still really good. Looking forward to using it on my salad this afternoon.
